Day 2 of veganism: one banana at a time
Hello once again!
So the second day of our little experiment has passed and since it was a busy day for both of us, long hours at school and way too much homework, then our eating patterns suffered for sure, but we didn't fall of the tracks, we still managed to eat fully vegan.
We started our day with some fruit, mainly bananas and some apples and I also had some granola with pomegranate, blueberries and goji berries, i added coconut milk to it and it was absolutely delicious.
We also encountered our first minor setback during lunch, when we couldn't find anything vegan in the cafes on campus. I could luckily eat at home as well, but I ended up having to make a fruit salad for my roommate and take it to uni for her, just so she could have something for lunch.
We had an amazing plan to make some potatoes with green herbs for dinner, but since we were both so busy, then we decided we'd settle for some instant (vegan) noodles instead, along with some tomatoes, cucumber and carrots.
After dinner we snacked on some more bananas, different nuts and I also had some multigrain cakes (something similar to rice cakes) with peanutbutter and homemade raspberry jam.
Feeling wise, I personally don't feel any different so far, but I think it's fun to try new things and learn more about what i eat.
So all in all we're taking it one banana at a time and enjoying the experiment as much as possible.
