Recipe: Healthy Low Sugar Vegan Christmas Cookies/Gingerbreads

Today we're here with a recipe of our own, we're very excited to share it, since we loved it a lot ourselves.
You are about to learn how to make quick and easy healthier versions of Christmas cookies or gingerbreads, we made them as low sugar as possible, as a sweetner we used maple syrup and dates and decorated the cookies with sugar free chocolate, so lets just get into it then.
You will need:
- whole grain wheat flour - around 150 - 175 g
- coconut oil - 50 - 55 g
- dates - around 8 - 10 average sized dates
- maple syrup/golden syrup/honey/sweetner of your choice - 40 - 45 g
- gingerbread spices of your choice - about a teaspoon
- baking soda - quarter of a teaspoon
First we simply mixed all of the dry ingrediences together, then i blended the dates with a little bit of water, until it was of a smooth consistency, firstly I added coconut oil (previously melted) to the dry mixture and Kai stirred it well, then we added the blended dates and the syrup, which you could also exchange with more dates, I think it'd still work out well, might be a bit more crumbly, but still delicious.
Once the texture of the dough feels right, it should feel soft, but not too sticky, then mould it into a big ball and put in the frisde for the next day or turn them into cookies right away. (We baked them for about 10 minutes at 180 degrees, Celsius)
If the texture feels too sticky and wet, add more flour, if it feels too crumbly and dry, add more dates, until it feels right. If you wish to make the gingerbreads look more brown, then you can also add a bit of cocoa.
For the gingerbread spice mixture, you can use a ready mix that will give the traditional gingerbread taste or you can make it yourself, there are a lot of fun recipes that include all of the ingrediences you can use, but we used a ready mix, simply added some cinnamon to it and they ended up tasting delicious. So delicious in fact that most of them were gone from the table, before we had a chance to take a photo of them, however we managed to photograph the few survivors.
