Recipe: Delicious Christmas Cake

Today we're here with our own recipe, we decided to try and make a cake ourselves and since we were in the mood of Christmas, then we were quite inspired by it, while we were making it. The longer name to the cake would be Chocolate, gingerbread, peanutbutter, coffee-bean cake, which pretty much sums up all of the ingrediences, but let's go over them anyway.


Ingrediences: ( for approx 24 cm diameter cake tin)

  • Gingerbreads - we used ones that had chocolate cream inbetween the two gingerbread cookies, delicious, but you can use any other or make your own, if you wish to.  around 167g, but really anything from 150 - 200 g would probably be fine,
  • Coconut oil - 50 g
  • Peanutbutter 70 - 80 g
  • Dark Chocolate (or milk or white, if you prefer those, but then it might be very very sweet)   200 g
  • Chocolate flavoured soy milk, or any milk like drink that you can find, coconut cream works well as well, around 175 g
  • Coffebeans, optional, we used coffeebeans covered in dark chocolate, you can put as little or as much as you wish.
The recipe is actually very simple, firstly, cut up or simply smash the gingerbread into tiny pieces, the smaller pieces, the smoother the bottom layer of the cake will be, once that is done, you can add the coconut oil, which will tie all of the cookie crumbs together, mix it well, so it would turn into something like a very crumbly cookie mix, then press it into your cake tin, or any suitable dish that you can find, make sure to put a baking paper to the bottom of it, so it wouldn't stick, or use some oil.


Once the gingerbread base of the cake has been pressed into the cake tin, put it into the fridge, so it would turn more solid, while your doing that you can start melting the chocoalte, the way we did it was to heat up some chocolate soy milk and then pour it on the chocolate, that was waiting in a heatproof bowl, then we simply stirred it until it was all melted.

Then let the chocolate cool down to room temperature, because of the milk in it, it won't turn completly solid anymore, it will be smooth, but not too runny, if it gets too solid, you can add more milk and if it's too runny, then you can add more chocolate, but with our amounts it was perfect.


We let the cake cool in the fridge for about 15 - 20 minutes then we started putting peanutbutter on  the base we had already created, we simply put it so that the entire base of the cake would be covered. then we put some coffe beans in dark chocolate on the peanutbutter and lastly once the chocolate was at room temperature we poured that on top of everything else and also added some more coffee beans.

That was it, it really was rather easy to make and didn't take too long. It also ended up tasting amazing. Obviously it's not a healthy snack to have, so if you do make it, eat it in moderation.

    1. It truly was amazing, maybe one day we'll make a healthier version of it and you can give that a try as well, or just make this one and have a cheat day. :)
