Healthy Recipe: Chocolate and Goji Berry Truffles (Vegan)

Today we are here with a very exciting recipe review, since both me and Kai are huge sweettooths, then we love trying out healthier alternatives to chocolate and other high sugar treats, this time we followed a recipe from a cookbook Kai recently bought, it's by a way more famous Estonian blogger, who I shall link HERE.





Anyway let's get into the recipe, the ingrediences for 10 large/20 small truffles were: dates (80 g), cashews (50 g), walnuts (20 g), goji berries (30 g), cocnut oil (12 g), cocoa powder (20 g) and a bit of Himalayan salt. It was very easy to make as well, just blended all of the ingrediences together and left a bit of cocoa powder to cover the truffles in them, no rocket science.

We personally really loved the recipe and how it turned out, they truly tasted amazing, they weren't too sweet and didn't taste too healthy, I could imagine myself eating them again, they're such a nice snack to have and they actually contain such a large variety of micronutrients, since all of the ingrediences are packed with them. We didn't add any sugar to them either, since the dates gave enough sweetness, the amount of salt used was so minor as well that it didn't make the treats any less healthy, although as always with treats rather high in fat, they should be consumed in moderation.


So all in all we loved this recipe and would recommend the book to those who are interested in slightly healthier meal and snack ideas, we'll definitely be trying out some other recipes from there and will give our opinion on them.
