Recipe: Vegan Blueberry Cookie Cake

Today I'm here with a recipe as promissed, we made a very delicious blueberry cookie cake, which would be good for birthdays, celebrations or just lonely nights by yourself, when you're in need of cake. It's very easy to do and it can easily be created as a non-vegan version, a low sugar version or gluten free version, whatever would suit your needs the best.




As you can probably guess the main part of the cake is made out of cookies, we used vegan cookies by the brand cullón, their sugar free fibre biscuits are great for cakes of this type. I'd recommend using biscuits that are square, just because they're easier to arrange so that you'd get a square cake, it's quite logical.



The first step is to plan out the layout of the cake, how big you want it to be, how many layers. In our example, we used the cookies to make a 3 by 2 cookies type of rectangle, since our cookies weren't perfectly square. We made three layers and that ment that alltogether we used 18 cookies.


Once you have planned that out, you can start laying down the first layer, on top of that you can use a cream or yoghurt of your choice, we used an oat placed cooking cream, which we lightly whipped and mixed with sugar on top of the cream we put a layer of bananas and then again cream, once that was evenly done, I laid the next layer of biscuits on the cream and repeated the previous step, only also added blueberries to the layer, then the third layer of biscuits, which we covered with blueberry flavoured soy based yoghurt/dessert and decorated with blueberries, dark chocolate syrup and coffee beans covered with dark chocolate. These were just the things we happened to have, you could easily mix it up.


So all in all the ingrediences were:


  • 163 g of sugar free fibre biscuits
  • 75 g of oat based cooking cream (15% fat)
  • tablespoon of cocnut sugar
  • 85 g of bananas, chopped into slices
  • 50 g of blueberries
  • 90 g of blueberry yoghurt (soy based)
  • Decorations of your choice
And that was all, it was very easy and fast to make and it tasted amazing. We recommend.
