Minty Oreo Cake Recipe (Vegan)

Today we're here with another recipe that we tried out and wished to review, this time, I don't think it could be called a healthy one, since it did involve two boxes of oreos, however, it is vegan and it's rather easy to make, no baking needed.



Ingrediences:


  • 36 oreo cookies
  • 2 tablespoons of cocnut oil (note to self: three would probbaly be better)
  • 400 g of cashew nuts (have to be soaked in water overnight)
  • the juice of three limes (we used lemon juice, worked just as well)
  • 3 tablespoons of maple syrup (could also be runny honey)
  • coconut cream (the thick part of canned coconut milk, the can has to be held in the fridge for at least one night, then opened from the bottom side, liquid milk should be poured away, until only the creamy part has remained)
  • a few drops of peppermint essence (optional)
  • chocolate syrup (also optional)
First we made the bottom part of the cake, simply by crushing 20 oreos and mixing them with the coconut oil, we found that two tablespoons, didn't quite make it stick together enough, so maybe add more, until it feels like it won't instantly fall apart. Then I put all of it evenly on a cake tin (about 25 cm in diameter) and pushed the cookiecrumbs as together as possible.

for the top layer of the cake, I simply blended together all of the other ingrediences, apart from the chocolate syrup, I left some pieces of oreos bigger as well, so they'd add more texture to it and that was about it, the texture of the top layer should be otherwise rather smooth and can easily be spreaded on the bottom layer of oreos.

Then we put the cake in the freezer for about an hour and once we took it out, we simply added some chocolate syrup as decorations. It wasn't very difficult to make and ended up being rather tasty, although we felt that the top layer could've had more flavour to it, maybe some fruit or berries or cocoa, coconut flakes or something else around those lines, but to those who love a milder taste, it definitely wasn't too sweet nor agressive-tasting in any way.

The texture of the cake was otherwise very good, only the bottom layer did try to fall apart rather fast, so that's why more coconut oil or why not even peanutbutter could be added to it, to make it stay together. 

We liked it and would probably consider trying it again and improving it, That's all for today, hope you'll try it out as well.
